Equipment

  • 1 Standing Mixer
  • 1 1 1/2 inch Cookie Scoop

Ingredients
  

  • 1 18 oz Box Brownie Mix
  • 1/2 Cup All-purpose Flour
  • 2 Eggs
  • 1/2 Cup Vegetable Oil
  • 1 tsp Peppermint Extract
  • 1/2 Cup Chocolate Chips
  • 1/2 Cup Andes Mints Chopped

Instructions
 

  • Prepare your kitchen - set the oven to 350 and prepare baking sheet.
  • In a standing mixer, combine brownie mix, flour, eggs, oil and extract. Mix until well blended.
  • Add about half of both the chocolate chips and mint candies to the mixer, mix gently.
  • Using a cookie scoop, scoop dough on prepared cookie sheet.
  • Sprinkle remaining candies over the top of each cookie.
  • Bake cookies at 350 for approximately 10 minutes.
  • Allow to cool on wire rack. Serve and enjoy!
