- 1 18 oz Box Brownie Mix
- 1/2 Cup All-purpose Flour
- 2 Eggs
- 1/2 Cup Vegetable Oil
- 1 tsp Peppermint Extract
- 1/2 Cup Chocolate Chips
- 1/2 Cup Andes Mints Chopped
Prepare your kitchen - set the oven to 350 and prepare baking sheet.
In a standing mixer, combine brownie mix, flour, eggs, oil and extract. Mix until well blended.
Add about half of both the chocolate chips and mint candies to the mixer, mix gently.
Using a cookie scoop, scoop dough on prepared cookie sheet.
Sprinkle remaining candies over the top of each cookie.
Bake cookies at 350 for approximately 10 minutes.
Allow to cool on wire rack. Serve and enjoy!
