HOW TO MAKE THIS RECIPE:
The full recipe is below. However, lets walk through the steps to ensure that you get the perfect outcome every single time.
- Prepare your kitchen – set the oven to 350 and prepare baking sheet. Prepare baking sheet with silicone mat or parchment paper and set aside. My FAVORITE low-cost cookie sheets are these sheets with a slight groov.
- In a standing mixer, combine brownie mix, flour, eggs, oil and extract. Mix until well blended.
- Add about half of both the chocolate chips and mint candies to the mixer, mix gently.
- Using a cookie scoop, scoop dough on prepared cookie sheet.
- Sprinkle remaining candies over the top of each cookie.
- Bake cookies at 350 for approximately 10 minutes.
- Allow to cool on wire rack. Serve and enjoy!

Tips for Perfect Results
- Don’t over bake: Cookies will continue to set as they cool.
- Chill the dough: For thicker, chewier cookies, refrigerate the dough for 30–60 minutes before baking.
- Add texture: Sprinkle a little sea salt on top before baking to enhance the chocolate-mint flavor.
- Eat fresh out of the oven and enjoy!
These Andes Mint Chocolate Cookies are more than just a cookie—they’re a celebration of chocolate and mint in every bite! Soft, chewy, and perfectly sweet, they’re ideal for sharing or keeping all to yourself (we won’t judge). Make a batch and watch them disappear fast!
