There’s something so magical and nostalgic about the combination of rich chocolate and cool mint.
Growing up, like clockwork, every February our house would erupt with cheer (and often some light fighting) as our annual girl scout cookie delivery would come from the local neighborhood scouts. My mom has always been one that loves to support local and give back any chance that she could. So, you can bet, every Girl Scout that came to our house, put on a brave “saleswomen” face and gave their sweet little pitch was going to get a sale out of her. (even if we had already purchased boxes from one or more other little girls). What can I say… she is a sucker for a good business deal – especially one that results in cookies.
However, while we love cookies just as much as the next person, you can only eat so many mint cookies before getting tired of them. Therefore, we wanted to create some fun alternative treats that use these delicious cookies as the base but spice up the desert table.
These bite-sized treats are creamy, chocolatey, perfectly minty, and shockingly simple to make. Whether you’re preparing a dessert for a party, packaging gifts for friends, or just craving a sweet treat with your evening coffee, these truffles deliver every single time. These have easily become one of my favorite treats to keep in our freezer for last minute hosting, late night cravings and just about anything in between. But don’t take my word for it. Grab these basic ingredients to bring this delicious recipe to life.
All of the ingredients may be in your cabinet, or they can be found in your local grocery store.
- Mint cookies – You can use Girl Scout Thin Mint cookies ($6.00), Keebler Grasshopper Mint Cookies ($3.58), OREO Mint Creme Chocolate Sandwich Cookies ($5.98), or Great Value Fudge Mint Cookies ($2.26).
- Creamy Cheese – This acts as a paste and adds a creaminess to the center.
- Semi-Sweet Chocolate or Chocolate Almond Bark – for coating the truffles.
- Peppermint Extract – This will give the coating an extra minty flavor
- Optional toppings: crushed extra cookies, drizzle of white chocolate, sprinkles, etc.


HOW TO MAKE THIS RECIPE:
The full recipe is below. However, lets walk through the steps to ensure that you get the perfect outcome every single time.
- We will start by preparing our kitchen. Gather your mixing bowls and ingredients.
- Line a cookie sheet with a silicone mat or parchment paper and set aside. My FAVORITE low-cost cookie sheets are these sheets with a slight groove.
- Now it’s time to have some fun! In a medium sized plastic bag, add your cookies and crush them to fine crumbs. (This can also be done in a food processor, if you want to cut out a little bit of time and fun).
- In a standard kitchen aid mixer or similar, add the cookie crumbs and 4 ounces of cream cheese – blend on high until it is well combined and creamy. (This step can also be done by hand or using a handheld mixer)
- Once the mixture is well blended, using a 2 Tablespoon cookie scoop, scoop dough and roll into even balls. Place balls on prepared cookie sheet.
- Allow balls to set in the fridge for a minimum of 30 minutes before coating. This will help so the balls don’t fall apart in the warm chocolate coating.
- Next, melt chocolate coating. Once fully melted add peppermint extract and mix well.
- Gently coat each ball in chocolate mixture and return to prepared baking sheet. Quickly coating the top of each truffle with desired toppings (cookie crumbles, sprinkles, etc.) before the coating is fully dried.
- Place the balls in the fridge to fully develop before serving.
